Full-Blood Wagyu Singapore — The 2GR Flank at Ember

26 Jun 2026

Full-blood Wagyu is a term that gets used loosely in Singapore’s dining scene. At Ember, it means something specific: the 2GR full-blood Wagyu programme, one of Australia’s most respected Wagyu breeding operations, producing cattle with verified full-blood Japanese genetics and marbling scores that stand alongside Japan’s domestic grading.

What Is Full-Blood Wagyu?

Wagyu is a Japanese breed — wa (Japanese) and gyu (cattle) — genetically predisposed to deposit fat intramuscularly rather than externally. That intramuscular fat, or marbling, is what creates the characteristic richness, tenderness, and long finish that Wagyu is prized for.

Full-blood Wagyu means 100% Japanese genetics — no cross-breeding with Angus, Hereford, or other Western breeds. This is the key distinction from F1 crossbred Wagyu (50% genetics) or Wagyu-influenced programmes. Full-blood animals produce the highest marbling potential of any programme outside Japan.

The 2GR Programme

2GR operates a closed full-blood Wagyu herd with direct lineage to Japanese bloodlines. The programme is known for consistency — every animal is raised to the same feed specification and assessed against marbling benchmarks before processing. The result is Wagyu that performs reliably at the highest end of the marble score range.

Why the Flank Cut?

The flank has a coarser, more open grain than premium loin cuts, which means it carries the flavour of full-blood Wagyu’s fat in a more savoury, beefy direction. It is a cut for guests who want intensity over pure tenderness. Sliced against the grain and rested properly, the 2GR Wagyu flank at Ember delivers a combination of chew, richness, and flavour that a butter-soft striploin simply cannot match.

Pairing Notes

Full-blood Wagyu’s fat richness calls for either a high-acid wine to cut through it — a structured Burgundy, or a lean Loire Cabernet Franc — or a wine with enough body to carry alongside it. Ember’s team will guide you toward the right choice from the cellar.
